Ingredients

  • 500g lamb (cut into chunks)

Step 1: Prepare the Ingredients

  1. Wash and chop all the vegetables.
  2. Cut the lamb into medium-sized chunks.
  3. In a bowl, mix the olive oil, garlic, salt, cumin, ginger, paprika, black pepper, turmeric, and cinnamon to make a marinade.

Step 2: Cooking the Tagine

  3. Add the lamb pieces and stir to coat them in the spices. Cover and let cook for about 5 minutes, stirring occasionally.
  4. Pour 1 cup of water into the tagine and bring to a gentle simmer.
  5. Arrange the potatoes, zucchinis, and broccoli on top of the meat. Cover and let it cook for 1 to 1.5 hours on low heat. If using a regular pot, check occasionally to ensure there's enough liquid.
  6. Sprinkle fresh coriander and parsley over the tagine once the meat is tender and the vegetables are soft.
