One of the most iconic Moroccan meals is lamb tagine, a delicious and hearty dish traditionally cooked in a clay pot. This version combines tender lamb with zucchini, potatoes, onions, and broccoli, infused with authentic Moroccan spices and olive oil for a perfect balance of flavors. This dish is typically served with Moroccan bread, and in some regions, it is enjoyed with a cup of Moroccan mint tea.

Step 2: Cooking the Tagine
- Place the tagine pot on low heat and add the olive oil. If you don’t have a tagine, you can use a deep pot.
- Add the onions and let them soften for 2–3 minutes.
- Add the lamb pieces and stir to coat them in the spices. Cover and let cook for about 5 minutes, stirring occasionally.
- Pour 1 cup of water into the tagine and bring to a gentle simmer.
- Arrange the potatoes, zucchinis, and broccoli on top of the meat. Cover and let it cook for 1 to 1.5 hours on low heat. If using a regular pot, check occasionally to ensure there's enough liquid.
- Sprinkle fresh coriander and parsley over the tagine once the meat is tender and the vegetables are soft.
Step 3: Serving the Tagine
- Serve the Moroccan lamb tagine directly in the tagine pot or transfer it to a large dish.
- Enjoy with Moroccan bread to scoop up the flavorful sauce.
- In many Moroccan households, this dish is paired with traditional Moroccan mint tea, enhancing the dining experience.
✔ Low and slow cooking: Tagine is best cooked over low heat to allow the flavors to blend.
✔ Use fresh spices: Authentic Moroccan spices give the dish its signature taste.
✔ Don’t rush: The longer the lamb cooks, the more tender and flavorful it becomes.
