Ingredients:

  • 6 tomatoes by type
  • 1 cup of quinoa, it is recommended to cook it first
  • 1 small onion, chopped
  • 2 cloves of garlic, chopped
  • 1 cup chopped spinach
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

 

How to prepare stuffed tomatoes :

 

 First, we prepare the tomatoes: to prepare the tomatoes, preheat the oven to a temperature of 375 degrees. Chop the tops of the tomatoes and then gently extract the insides with a spoon. Be careful not to pierce the skin. Set the tomato pulp aside in a bowl.

 Prepare the filling: Heat the olive oil in a frying pan over medium heat. Add the chopped onion and garlic and fry until transparent and fragrant. Add the spinach and cook until wilted, about two or three minutes.

 How to mix the filling: take a large bowl, then mix the cooked quinoa, fried vegetables, feta cheese, and also the tomato pulp that you extracted first. Then add balsamic vinegar, oregano, salt and pepper. Mix everything thoroughly until everything is combined.



 How to stuff tomatoes: spoon the quinoa mixture into each hollow tomato, then gently place it in a baking dish, and drizzle some oil over the tomatoes from above.

 How to bake it in the oven: put the dish in the preheated oven and bake for 25-30 minutes.

 How to serve: once finished, let it cool slightly before serving. Garnish with fresh basil leaves, as they add a special flavor to the dish.
